SPANISH CHICKEN PIE

Ingredients
1kg potatoes, peeled and chopped
3 tsp paprika
2 tsp oil
2 chopped onions
2 x 400g chopped tomatoes
300g of already cooked chicken, shredded
140g roasted peppers
Method
- Cook the peeled potatoes and then mash with a little butter and milk and a little of the paprika.
- In a large pan, heat the oil and cook the onions and garlic for a few minutes until softened. Stir in the remaining paprika for one minute, add the tomatoes, then bring to a simmer.
- Pour into a large oven proof dish and stir in the chicken and peppers.
- Spoon over the mash and bake for 15 minutes until the mash is golden and the sauce is bubbling.
Children who are not permitted chicken will have their dish prepared with butternut squash.
