Cottage Pie

Ingredients

500g minced beef
2 chopped onions
3 chopped carrots
3 chopped celery stalks
3 tbsp. plain flour
1 tbsp. tomato puree
1 litre vegetable stock 
2 chopped garlic cloves
2 kg potatoes
200ml milk 
25g butter
Little grated cheese
Method
  1. Heat 1 tbsp. olive oil in a large pan and sauté the beef until browned and then set aside. 
  2. Add a little more oil and then add the chopped onions, carrots and celery into the pan and gently sauté until softened, which is about 20 mins. 
  3. Add the garlic, flour and tomato puree and cook for a few mins before adding the beef back to the pan. 
  4. Add around 1/3 of the stock, increase the heat and then boil for a little while to reduce, before adding the rest of the stock before reducing the heat and cooking for around 45 mins, adding a little more water if needed.
  5. Meanwhile, make the mashed potatoes by peeling and chopping the potatoes, bringing to the boil in unsalted water and simmering until tender.
  6. Drain well and leave to air dry for a few mins before mashing with the milk, butter and a little of the cheese.
  7. Spoon the meat into a large baking dish and place the mashed potato on top. Sprinkle in the rest of the cheese and bake in the oven for around 30 mins until the topping is gorgeous and bubbling. 

Children who are not permitted beef will have their dish prepared with a plant-based alternative.

We serve a halal version of this dish.
