Cauliflower and Macaroni Cheese

Ingredients

250g macaroni 
1 head of cauliflower, cut into pieces
25g butter
2 tbsp. plain flour
1 tsp. mustard powder
450ml milk
100g grated cheese
Method
  1. Cook the macaroni according to instructions (we don’t add salt to any of our cooking) and add the cauliflower for the final five mins. 
  2. Melt the butter into a pan and stir in the flour and mustard powder and cook for two mins. Gradually add the milk, stirring all of the time, to make a smooth sauce. Add three quarters of the cheese. Yum!
  3. Drain the macaroni and cauliflower and stir into the sauce. 
  4. Transfer to an oven proof dish and sprinkle over the remaining cheese. 
  5. Place under a hot grill for a few minutes until the cheese is bubbling and golden. 
  6. Serve!
Children who are not permitted dairy will have their dish prepared with dairy free alternatives to cheese, milk and butter.
